Chimay Brewery is a brewery at Scourmont Abbey, a Trappist monastery in Chimay, Hainaut, Belgium, one of the eleven breweries worldwide that produce Trappist beer. During the summer of 1850, a small group of monks established themselves on the wild plateau of Scourmont near Chimay, setting up a farm, a brewery and a cheese plant. Locally sourced ingredients, a special strain of yeast and water drawn from a well inside the monastery gives the beers a particular and unique full-bodied character that is known worldwide as Chimay's signature quality and tradition.
